This wine was originally fortified during shipment to England to preserve its freshness. The process of ‘forcing up’ involves adding distilled alcohol to the grape marrow during fermentation, which stops fermentation and preserves the sweetness of the grapes. Marsala fortified in this way is aged in oak or cherry barrels for at least one to ten years, which transfers the wine’s fruity aromas to the malt and blends them with the malty notes.
